McGuires' Hotels Monthly Recipe - December 2016
Corn Fritters - With Poached eggs, avocado, salsa, beetroot yogurt and toasted almonds.
Corn Fritters:
Ingredients:
1 cup Self Raising Flour.
2 Eggs.
1/3 Cup Milk.
2 420ml Cans of Corn Kernels.
2 Tbls Chopped Chives.
100 gms Feta Cheese.
Butter.
Method:
Place Flour in a bowl.
Whisk Egg, add Milk and whisk. Add to Flour.
Fold in Corn, Chives & Feta.
Heat frying pan and grease pan with Butter.
Put ¼ cup of mix in frying pan and cook for 2-3 minutes until golden brown.
Beetroot Yogurt:
Ingredients:
1 Tin of Beetroot.
Greek Yogurt.
Sour Cream.
Method:
Blend Beetroot until fine.
Add Yogurt and Sour Cream to taste.
Avocado Salsa:
Ingredients:
1 Avocado, peeled & diced.
1 Large Tomato, diced.
2 Tbls Lime Juice.
1 Tbls Chopped Coriander.
Method:
Combine Avocado, Tomato, Lime Juice and Coriander in a bowl.
Season with Salt & Pepper to taste.
